Chawanmushi

Ingredients:
• 4 large eggs
• 1cup dashi stock
• 1 tablespoon soy sauce
• 1 tablespoon mirin
• 1 teaspoon sugar
• Fillings of your choice (such as shitake mushrooms, shrimp, ginkgo nuts, etc.)
Instructions:
1. Crack the eggs into a bowl and lightly beat them.
2. In a separate bowl, mix together the dashi stock, soy sauce, mirin, and sugar.
3. Divide the fillings evenly among four heat-proof cups or bowls.
4. Pour the beaten eggs into the cups, covering the fillings.
5. Pour the dashi mixture into the cups, filling each cup about three-quarters full.
6. Cover each cup with a piece of aluminum foil and secure it around the rim
7. Fill a large pot with enough water to come up the sides of the cups and bring the water to a boil.
8. Place the cups in the pot and cover it with a lid.
9. Steam the Chawanmushi for about 10- 12 minutes or until the eggs are set.
10. To serve, remove the aluminum foil and place each cup on a plate.
