Okoshi Recipe: Sweet and crunchy Japanese snack
Okoshi is a traditional Japanese snack made with a variety of ingredients such as steamed rice and red bean paste. Crunchy, sweet, and satisfying, it's the perfect treat to enjoy anytime.

material:


• 4 cups puffed rice


• 1 cup adzuki beans


• 1/2 cup sugar


• 2 tbsp vegetable oil


• 1/4 cup roasted peanuts, chopped


• 1/4 cup chopped dried fruit (raisins, cranberries, etc.)


• 1/4 cup roasted sesame seeds


• 1/4 teaspoon salt



Instructions:


1.In a large bowl, mix the glutinous rice, adzuki bean paste, sugar and vegetable oil. Mix until well blended.


2. Add chopped peanuts, dried fruits and roasted sesame seeds. Season with a pinch of salt.


3. Line a baking sheet with parchment or plastic wrap. Spread the mixture evenly over the sheet.



4. Use the bottom of the measuring cup or your hand to press down on the mixture until it is tightly packed.


5. Cover the mixture with another piece of parchment paper or plastic wrap, let cool, then refrigerate for at least 30 minutes.


6. Once hardened, cut the okoshi into squares or sticks and place in an airtight container. Enjoy as a sweet, crunchy snack anytime.
