katsudon is a popular Japanese dish of breaded, deep-fried pork cutlets, scrambled eggs, onions, and a sweet-spicy sauce served on top of piping hot rice. It's an easy-to-make, flavorful meal that nourishes the mind and body.

• 4 boneless pork chops


• 1 cup all-purpose flour


• 2 beaten eggs


• 2 cups bread crumbs


• Vegetable oil for frying


• Salt and pepper to taste


• 1 large onion, sliced


• 2 large eggs


• 2 tbsp mirin


• 2 tbsp soy sauce


• 2 tablespoons sugar


• rice for serving



Instructions:


1. Cut the pork chop into thin slices. Place cutlets between two sheets of plastic wrap and pound with meat mallet or rolling pin until even thickness.


2. Set up the breading station by placing the flour, beaten egg, and breadcrumbs in separate shallow plates. Season the flour and bread crumbs with salt and pepper.


3. Sprinkle the tonkatsu with flour first and shake off the excess flour. Next, dip both sides in beaten egg. Finally, sprinkle bread crumbs and press lightly to adhere. Repeat with remaining pork cutlets.



4. Heat about 2 inches of vegetable oil in a large skillet over medium-high heat. The oil is ready when the crumbs in the oil sizzle and turn golden brown within 15 seconds.


5. Fry 2-3 pieces of tonkatsu in hot oil for 4-5 minutes on each side until golden brown and crispy. Remove with a slotted spoon and place on a plate lined with paper towels to drain excess oil. Repeat with remaining pork cutlets.


6. Heat a small amount of oil in another frying pan over medium heat. Add the sliced ​​onion and cook until soft and translucent, about 5 minutes.


7. Beat 2 large eggs in a bowl and pour into the frying pan with the onions. Stir gently with a spatula for about 2-3 minutes until the eggs are fully cooked.


8. Put mirin, soy sauce and sugar in a small pan and mix. Cook over medium heat, stirring constantly, until sugar is completely dissolved.


9. Add rice to each bowl to assemble the katsudon. Topped with tonkatsu, scrambled eggs and onions. Pour the sauce over the top and serve immediately.
