Ingredients:

• 1 pound boneless chicken thighs, cut into bite-sized pieces

• 1 tablespoon grated ginger

• 1/4 cup soy sauce

• 2 tablespoons sake

• 2 tablespoons mirin

• 2 tablespoons potato starch or cornstarch

• Vegetable oil for frying



Instructions:

1. In a large bowl, combine the chicken pieces with the grated ginger and minced garlic.


2. In a separate bowl, mix together the soy sauce, sake, and mirin.

3. Pour the sauce over the chicken and marinate for at least 30 minutes, or up to 2 hours in the refrigerator.

4. Drain the chicken from the marinade and toss with the potato starch or cornstarch until evenly coated.
