Onigiri

Onigiri is a popular Japanese snack that is enjoyed by people of all ages. Ingredients: 


• 2 cups sushi rice 


• 2 1/4 cups water

• 1/4 cup rice vinegar

• 2 tbsp sugar

• 1 tsp salt

• 4 sheets of nori seaweed

• Filling of your choice (eg pickled plum, canned tuna, cooked salmon, or sautéed vegetables)


Instructions:


1. Rinse the rice in cold water until the water runs clear.This will help remove any excess starch from the rice and prevent it from becoming too sticky. 


2. Place the rinsed rice in a pot with 2 1/4 cups of water and bring to a boil over high heat. Once boiling, reduce the heat to low and cover the pot with a tight-fitting lid. Simmer for 15-20 minutes or until the water is fully absorbed and the rice is cooked through.


3. The rice is cooking, mix the rice vinegar, sugar, and salt in a small bowl until the sugar and salt are fully dissolved.


4. Once the rice is cooked, transfer it to a large bowl and add the vinegar mixture. paddle or wooden spoon to mix the rice thoroughly, being careful not to smash the grains.



5. Allow the rice to cool to room temperature before shaping it into onigiri.

6. To shape the onigiri, wet your hands with water and sprinkle some salt on them.

7. Make a small indentation in the center of the rice ball with your thumb and add a small amount of filling (eg pickled plum, canned tuna, cooked salmon, or sautéed vegetables) . Cover the filling with a small amount of rice and shape the rice ball into a neat triangle or oval.

8. Wrap each onigiri with a sheet of nori seaweed, shiny side facing out, to help hold its shape and provide an additional layer of flavor.


9. Serve the onigiri immediately or wrap them in plastic wrap and store in the refrigerator for up to 2 days.
