• 2 cups buckwheat flour


• 2 cups all-purpose flour


• 2 tbsp vegetable oil


• 6 cups dashi (Japanese fish soup)


• 2 tbsp soy sauce


• 2 tbsp mirin


• 1 tablespoon of sugar


・Toppings (pork ribs, green onions, kamaboko, seaweed, raw eggs, etc.)



Instructions:


1. Put buckwheat flour, cake flour, and salad oil in a large bowl and make a dough.


2. Knead the dough on a floured surface for 8-10 minutes or until smooth and elastic. Cover the dough and let it rest for 30 minutes.


3. Divide the dough into 8 pieces and roll each into a thin rope shape. The rope he cuts to 1/4 inch and makes noodles.



4. Add the dashi stock, soy sauce, mirin, and sugar to a large pot and bring to a boil.


5. Cook noodles in broth for 2-3 minutes or until al dente.


6. Place the noodles in a bowl and top with your favorite toppings.


7. Pour the hot soup over the noodles and toppings and serve immediately.
