Gyutan, also known as gyutan, is a popular Japanese dish characterized by its richness and umami. I will show you how to make beef tongue at home.

• 1 beef tongue, about 2-3 pounds


• 1 finely chopped onion


• 2 cloves of minced garlic


• 2 glasses of sake


• 2 cups soy sauce


• 1 cup of sugar


• 1 cup mirin


• 1 cup of water


• 2 bay leaves


• 5 black peppercorns


2 to 3 inches of ginger (peeled and sliced)


• 2 sliced ​​green onions



Instructions:


1. Wash the beef tongue and put it in a large pot. Add enough water to cover your tongue and bring to a boil.


2. Skim off any impurities that float to the surface and simmer over low heat. Cover the pot and cook the tongue for 2 to 3 hours, or until tender and fully cooked.



3. Drain the tongue and let it cool slightly. Peel off the tough outer layer and any remaining fat from the tongue. Cut the tongue into thin slices.


4. Put onions, garlic, sake, soy sauce, sugar, mirin, water, bay leaves, pepper, ginger and green onions in a large pot and mix.


5. Bring the mixture to a boil and reduce heat to a simmer. Cook for 10 minutes or until half cooked, stirring the mixture occasionally.


6. Place the thinly sliced ​​tongue on a shallow plate and pour the sauce over it. Marinate the tongue in the sauce for at least 2 hours, preferably overnight.


7. Preheat grill or broiler to high heat. If using a broiler, line a baking sheet with foil.


8. Place marinated tongue on grill or baking sheet and grill 4 to 5 minutes per side, or until sauce is caramelized and tongue is slightly browned.


9. Serve beef tongue immediately and add green onions if you like.


Beef tongue is best enjoyed as a main dish or as an ingredient in other dishes such as okonomiyaki. This recipe serves 4-6 people, but you can adjust the ingredients to make more or less. fun!
