material:


 8 ounces Mentaiko


• 2 tablespoons sake


• 2 tbsp mirin


• 2 tbsp soy sauce


• 2 tablespoons sugar


• 1 teaspoon red pepper flakes (or to taste)



procedure:


1. Clean the mentaiko: 
Rinse the mentaiko and pat dry with a paper towel.


2.Marinated eggs: 
In a large bowl, mix sake, mirin, soy sauce, sugar, and red pepper flakes. Add the eggs to the bowl and mix well to coat the eggs with the marinade.


3. Set aside: 
Cover the bowl and marinate the eggs in the refrigerator for at least 2 hours or overnight for best results.


4. Tamagoyaki: 
Heat a frying pan over medium heat and add the marinated eggs. Cook, stirring frequently, until eggs are reddish-orange and set. This takes about 5-7 minutes.


5. Placing Mentaiko: 
After baking, please enjoy the mentaiko at room temperature or lukewarm. You can eat it as it is, or use it as a topping for rice or pasta. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
