1/2 cup coriander leaves


• 1/4 cup tamarind pulp


• 2-3 green chillies


• 1/2 teaspoon cumin powder


• 1/4 teaspoon black salt


• Salt of your choice


1/4 cup roasted cumin powder


1/4 cup sugar or jaggery (optional)

1. To make the puri, combine semolina or wheat flour, all-purpose flour, salt and carom seeds in a large mixing bowl. Add water if necessary and knead until the dough is smooth. Cover the dough with a damp cloth and let it rest for 30 minutes.


2. To make the filling, combine boiled mashed potatoes, chickpeas, onions, tomatoes, coriander, cumin powder, coriander powder, red pepper powder, and salt in a large mixing bowl. Mix well until everything is even.


3. To make pani, blend water, mint leaves, coriander leaves, tamarind pulp, green chillies, cumin powder, black salt, salt, sugar or jaggery (if used) in a blender until smooth. 4. To assemble the pani puri, take a small ball of puri dough and roll it out into a small thin circle. Fry the puri in hot oil until golden brown. Drain puri on paper towels to remove excess oil.


4. Once the puri is cool enough, poke a small hole in the center of the puri with your thumb or a spoon. Pour the filling mixture into the puri and dip into the pani. Squeeze the puri lightly to soak the pani into the filling , then pop the pani into your mouth and enjoy the bursting flavor!
