Ingredients:

• 4 oz. Tofu (cut into 1 cm cubes)


• 2 oz. Shirataki (or thin noodles)


• 2 oz. Vegetables (chopped carrots, mushrooms, Chinese cabbage, etc.)


• 4 cups dashi (or chicken or beef broth)


• 2 tbsp soy sauce


2 tablespoons of sake (or cooking sake)


• 2 tbsp mirin (sweet sake)


• 2 teaspoons of sugar


• Salt and pepper to taste


• 2 sliced ​​green onions


fresh cilantro (optional, for garnish)



Instructions:


1. Boil the dashi stock in a large pot.


2. Add chicken, tofu and noodles and simmer for about 5 minutes until chicken is cooked through.


3. Add sliced ​​vegetables and simmer until tender, about 2 minutes.


4. Mix soy sauce, sake, mirin, sugar, salt and pepper in a small bowl.


5. Pour the mixture into the pot and stir well to combine.
