焼き鳥 / Yakitori

Yakitori is a Japanese dish of bite-sized pieces of chicken, vegetables, or other meat that are grilled on skewers. This dish is a staple of Japanese food stalls and is popular not only at home but also in restaurants.

Material:


• 1 pound chicken breast or thigh, cut into 1-inch cubes


• 1 large onion, diced


• 1 red bell pepper, cut into squares


• 8-10 bamboo skewers soaked in water for 30 minutes


• 4 tbsp soy sauce


• 2 tbsp mirin (sweet sake)


• Sake (Japanese sake) 2 tablespoons


• 2 tablespoons sugar


• 1 clove of minced garlic



Instructions:


1. Put soy sauce, mirin, sake, sugar and garlic in a small pot and mix. Cook over medium heat for 5 minutes until the sugar dissolves. Let the sauce cool to room temperature.


2. Thread chicken, onions, and red peppers alternately on skewers.



3. Heat the grill or grill pan over medium-high heat. Grease the grill with cooking spray or oil.


4. Place the skewers on the grill and brush with the sauce. Grill 5 to 7 minutes per side or until chicken is cooked through and vegetables are slightly charred.


5. Serve with rice or additional sauce.


This dish is perfect for summer barbecues and outdoor parties, or for a cozy dinner on a cold night. Also, try using different meats and vegetables to your liking. You can also add spices and herbs to your sauce for a little extra flavor.
